Homemade Blue Cheese Vinaigrette on a LittleBit of Everything Salad

Whew!

It is has been one busy week for me, and I am so beyond glad to say we have made it passed the hump!  I don’t know about you, but I feel like have have been driving the ‘struggle bus’ this week. If I’m being honest, all of of 2019 at this point – just spinning my wheels a bit…

However, this blog and a few other things and people have been so amazing! I love the support I’m getting through friends and family! I’ve received pictures of my recipes from friends who have tried them! What a blessing! 🥰

So, back to today..

I skipped my usual gym routine because I realized the return on the investment would not be greater than me spending it at the table finishing some homework.. Yes. No fun at all. (I’ve clearly been doing Investments homework too long.)

After an hour of work, I decided I wouldn’t let today be like last Wednesday–where I only ate a can of chicken noodle soup. Instead I was proactive and thawed some shrimp -somewhere in the middle- to bake that would go with a BIG salad.

That easy shrimp recipe will come a little later, but today, I want to share with you the blue cheese vinaigrette I used!

My salad consisted of a “LittleBit” of everything I had in my fridge: romaine, cucumber, cherry tomatoes, celery (LOVE in a salad), sweet onion, shredded carrots, green bell pepper, ~1/2tbs white corn [drained, rinsed], ~Tbs chickpeas [drained, rinsed]. *As always, I add black and crushed red pepper to everything.

Shrimp on top or on the side! Vinaigrette on top or tossed! So. GOOD.

Additionally, don’t let this combo of veggies limit you on your personal food journey through your fridge or pantry.  Feel free to be adventurous!

Blue Cheese Vinaigrette

Savory and tart dressing!

Ingredients

  • 1/4 cup olive oil
  • 1/2 cup white wine vinegar (Pompeian)
  • 1 1/2 tsp dijon mustard
  • 3 tbsp Blue Cheese crumbles
  • 1/2 tsp Italian seasoning
  • 1 Pinch crushed red pepper (optional)

Instructions

  • Place all ingredients in a container with lid.
  • SHAKE!

Notes

May also whisk together in a bowl.
Refrigerate any leftovers for about 1-2 weeks.

The wonderful thing about a new dressing is it makes any old salad NEW.  Here, I measured everything into a plastic container and shook it up. I also have leftovers for at least a few more salads this week! Don’t forget to give it a shake then too because it will separate!

Heck, I bet marinating chicken in it would be great, too. 🤔
