How to Make Enchilada Casserole
Preheat your oven to 350°F.
Spread about ¼ cup of enchilada sauce across the bottom of a 9×13-inch baking dish.
Layer tortillas over the sauce. If you’d like cleaner slices later, trim the rounded edges of the tortillas to create more even layers.
Season the cooked ground beef and shredded chicken with salt, pepper, cumin, and Goya seasoning to taste.
Spread half of the casserole with shredded chicken and the other half with seasoned ground beef, or mix the meats together if you prefer.
Sprinkle black beans and green chiles over the meat, if using.
Add another layer of tortillas, then spread more enchilada sauce evenly over the top.
Cover tightly with aluminum foil and bake for about 15 minutes.
Remove the foil, sprinkle generously with shredded Mexican cheese or queso fresco, and continue baking for another 5–10 minutes until the cheese is melted and bubbly.
