Chorizo Breakfast Casserole

This dish adds a little flare to your average morning! Great for serving to special guests or an early tailgate party! Easily doubled to for more servings.

  • 9x13 casserole dish or aluminum pan (for easy disposal)
  • Mixing bowl
  • Serrated bread knife


  • 1 lb. Mexican blend cheese, shredded
  • 1 lb. chorizo, cooked
  • 6 slices white bread, decrusted and cubed
  • 6 eggs, well beaten
  • 2 cups milk
  • 1 tsp salt
  • 1 tsp dry mustard, ground
  • pepper to taste


  • 1 avocado, sliced
  • fresh salsa


  • Mix together eggs and milk with dry seasonings.
  • Add in chorizo, cheese, and bread cubes. Fold until completely combined.
  • Pour into greased 9x13 baking dish; cover and refrigerate overnight.
  • Bake at 350° for 45 minutes before serving.
  • Have avocado slices and salsa available for garnish!


TIP:  Press out the excess when draining fat from chorizo!  We don't want to overpower the other flavors in the dish!
