Ingredients
¾cupCrisco All-Vegetable Shortening
1¼cupsLight brown sugar, firmly packed
2TbspMilk
1TbspVanilla extract
½tspPumpkin spice
1Egg
2cupsAll Purpose Flour
1tspSalt
¾tspBaking soda
½cupPecans, chopped
1cupWhite chocolate chips
Instructions
Beat on medium speed the shortening, brown sugar, pumpkin spice, milk, & vanilla in a large bowl until blended.
Beat in egg.
Stir with fork or small whisk the flour, salt, & baking soda in another medium bowl.
Gradually pour & beat flour mixture into the wet mixture until just combined through.
Fold in pecans and white chocolate chips with a rubber spatula.
Using a table spoon, make and roll 1 inch balls and place 2-3 inches apart on a lined baking sheet.
Bake at 375° for 10-11 minutes for perfectly chewy cookies.
Notes
Tips:Store in an airtight container to keep fresh prior to serving.For easier fresh-baked cookies: Make cookie dough the day ahead and wrap tightly with plastic wrap or foil before making into the balls.
