White Chocolate Pumpkin Spice Cookies

Equipment

Ingredients

  • ¾ cup Crisco All-Vegetable Shortening
  • cups Light brown sugar, firmly packed
  • 2 Tbsp Milk
  • 1 Tbsp Vanilla extract
  • ½ tsp Pumpkin spice
  • 1 Egg
  • 2 cups All Purpose Flour
  • 1 tsp Salt
  • ¾ tsp Baking soda
  • ½ cup Pecans, chopped
  • 1 cup White chocolate chips

Instructions

  • Beat on medium speed the shortening, brown sugar, pumpkin spice, milk, & vanilla in a large bowl until blended.
  • Beat in egg.
  • Stir with fork or small whisk the flour, salt, & baking soda in another medium bowl.
  • Gradually pour & beat flour mixture into the wet mixture until just combined through.
  • Fold in pecans and white chocolate chips with a rubber spatula.
  • Using a table spoon, make and roll 1 inch balls and place 2-3 inches apart on a lined baking sheet.
  • Bake at 375° for 10-11 minutes for perfectly chewy cookies.

Notes

Tips:
Store in an airtight container to keep fresh prior to serving.
For easier fresh-baked cookies:  Make cookie dough the day ahead and wrap tightly with plastic wrap or foil before making into the balls.
